I've played System Shock 2, and while it's mostly deaf-friendly, the cinematic parts aren't (and the part where Shodan introduces herself).

I'm wondering if System Shock 1 is worse in aspect of deaf-friendliness? Are the logs audio only, or are there texts as well that I can read? Anything else that isn't deaf friendly?

synfresh: I may get downvoted for this, but GoG advertises (as they do every game) this by putting DRM-Free in the OP (premiering DRM-free on GOG.com) but did the original game actually have any DRM?
Even though the original game may not had any DRM (not really sure about that), in a time where the biggest online stores sell games that work only if you install their mandatory client (read Steam, Uplay, Origin etc.) which in fact is DRM even though many folks don't see it that way, GOG has to mention wherever they can that their products (well, not really theirs but you know what I mean) come with no clients, no DRM, no nothing - just pure .exe installers.

No, System Shock Portable uses DOSBox to run, while the enhanced version runs natively. More details regarding the GOG version can be found here.

I remember that everything in the original game had text: logs, descriptions, messages, etc..
The few cutscenes had some subtitles too, if you enabled them.

The logs are text and audio...regarding anything else...I belive you don't have a visual warning, if you get attacked from behind? It's all audio? (not quite sure about that, so take it with a grain of salt)

EDIT: I just checked...if you are attacked from behind, it shows only on your "Health-bar"...and via sound, ofc.

HiPhish: Technically they just shut down the download link to the full game. It's the fault of SPP's author that he doesn't offer a patch, as he should have done in the first place. They would have been OK with that:
Technically even further, they asked him to take it down. They didn't shut it down as the Admin of SystemShock.org was (reluctantly) compliant.

Venser: I've beaten System Shock fairly recently so I'm not gonna buy it but I'm glad the game is finally on GOG. It feels like it belongs here. Now for that Blade Runner...
