For me, this is an easy entry. The coolest and most memorable easter egg or set thereof came from Legacy of Kain: Defiance and Blood Omen 2. The easter eggs in question were unlocked with button combinations at the menu screens. The first easter egg is from BO2 of Simon Templeman (Kain) saying his famous quote "Vae Victis" in proper classical Latin pronunciation. Throughout the series, he pronounced it Vay Viktus, but in this audio clip he purposefully and properly says Wai Wiktis. This was done to please the fans of the series who always complained he mispronounced it. See, Templeman is a classically trained Shakespearian actor.
The following easter egg from Defiance was also input at the title screen and changed the Soul Reaver that is held by both Kain and Raziel into a cardboard tube. This was a very cult reference to Penny Arcade and the Cardboard Tube Samurai. I don't know if anyone knows what that is though.
The next easter egg from Defiance was a portrait of an acquaintance of mine, Ben Lincoln, in one of the Reaver forges. He was a huge fan of the entire series and happened to be living in Seattle at the time. He was allowed to tour Crystal Dynamics' office, meet with the developers, and basically get all the inside dirt. He has a website dedicated to LoK called the Lost Worlds. At that site, one could find all the missing content from the games, fixes, etc. Anyway, I digress.
The final Easter egg from Defiance was input the same way, and changed Kain and Raziel into cell-shaded chibi cartoon characters. This was hilarious because in 2003 these cell-shaded versions circulated on the internet as supposedly being how the next installment of the game would actually look. Turns out it was an elaborate joke done by Ben Lincoln and his Lost Worlds site. The devs loved it so much, they put it into the final product.
All in all, it was just a trip to see those things in a game of such a serious nature. LOVED it! That was some awesome fan service as well, putting my friend in the game and indulging in his hoax.
