That seems reasonable to me. Perhaps better to not release it than to release it and have the game end up on the 2nd class citizen list. But hopefully it does show up when the devs are less busy and stressed.
v1.0 is fine with me, didn't expect it to launch in InDev nor would I've picked it up in an incomplete and unfinished state to begin with anyway.

As far as platform-agnostic mod support and mods in general are concerned - which I personally can do without as well, but:

And who would want to play a GZDoom engine FPS with a controller?

I was having the same thought, but regardless, I will most likely end end up buying the game twice as I don't mind the EA tag if the game is pretty much feature-rich (which the demo already showed it is), and the game is DRM-free anyway.
Sigh, guess I'll wait for a potential gog release. If it doesn't get a gog release I'll just miss out on a seemingly great game, it has happened before and it'll happen again, it's not the end of the world. :P

I was tempted to purchase the game on Steam, but after thinking about it for a bit I honestly don't want to support that store. :P

Selaco's Early Access launch is not likely to arrive on GOG unfortunately. v1.0 seems more likely. I made the unfortunate mistake of hinting at a GOG version before realizing the complications. For that I apologize.

Releasing on multiple launchers requires a lot more work and maintenance than I realized, and given our plans for active Post-Launch support during our Early Access period, it would end up slowing down development by a lot.
Thanks for the update, sanscript. It's the same "Update Fatigue" story as many other Indie games where the devs start out wanting to support smaller stores, but when a games needs 30 updates x 3-5 stores (because each store wants its own special achievements, has its own update 'backend', etc) and the novelty of re-uploading it hundreds of times wears off, they then want to support only the larger 1-2 stores.

^ Just another example here of how the Steam Workshop has been incredibly toxic and hostile to the formerly open and inclusive modding community. Time will tell if the game actually "needs" mods or if most people are going to play it as it is (just like Hedon, Hands of Necromancy, etc). If it's the latter then as long as we do get a "finished" DRM-Free version though, personally I'm happy with a v1.0 mod-less release.
The first part is understandable. I've been on plenty of projects which blew up the sky because all kinds of time-factors literally took more time than was anticipated, however, and honestly, I really can't fathom why they would be thinking of implementing Steam Workshop in the first place just to make it easier to mod for players.

To me, it's like the antithesis of 'easy' and 'open', especially since both GZdoom is open source and the community is, as you write, inclusive.

I don't think it's about the game 'need' any mod(s), but just like mods for Doom, Hexen, Quake and the like, it can be both fun and a modern experience with f.ex. Brutal, weather and HD mods. Then again, to me Selaco seems to have it all anyway, even in demo state.
I got no trouble waiting for the full release. Early Access is for chumps. I'm not paying to be someone's alpha/beta tester.

Although it's early access, it will feature Chapter 1 with 27 levels which will more or less be finished, while Chapters 2 and 3 will be included for free later on.

Some games with EA tag has enough gameplay loop to make it interesting for many hours, and Selaco being one of them.
