It has to be Final Fantasy VIII for me. VII is my favorite game of the franchise, but VIII was the first time I truly fell in love with a soundtrack
I see two questions being asked. One is about soundtrack, and the other is about a coop game.

As for soundtrack, I have to say that the Ace Attorney games have really has some surprisingly awesome tunes... especially the more recent ones that sound orchestrated. For an old-school game, I think the C128 version of Ultima V surprised me with it's soundtrack. It was good by the day's standards, but probably wouldn't hold up at all today.

As for coop game... for more recent games I've enjoyed Monster Hunter, Deep Rock Galactic, and Warframe quite a bit. But for old school, you can't beat the classic Gauntlet.
My most memorable soundtrack is Divinity II: Ego Draconis (Kirill Pokrovsky)

Those moments when you transform into a dragon for the first time after a sleepless night... when you leap gracefully off a cliff in Orobas Fjords like a man and fly like a dragon in an instant... when you step onto the soil of the Sentinel island and conquer your own Battle Tower... are unforgettable.

Homeworld soundtrack by Paul Ruskay, I still spin it up when the mood strikes to his day and it is my best memory of an opening scene for any game I've played.
Without a doubt, a soundtrack for NieR:: Automata. The way it reacts to what's happening on a screen, the voices, the sounds and THAT FINAL SONG. It is just too good.
Besides obviously the music from Heroes III, which is basically soundtrack of both my childhood and days present for more than 20 years now?

Definitely Darksiders II. Jesper Kyd simply nailed it. You may recall his works from such games like Assassin's Creed II or The Nations (aka Alien Nations II), but nothing compares to me with what he has composed for this game. The combination of ambient, classical themes, sometimes ominous electronica and haunting vocals is absolutely memorable.

The game itself is great, but thanks to it's soundtrack it becomes pure epicness!

Super Shinobi by Yuzo Koshiro

Coming from a C=64 to the Sega Mega Drive was a big jump, but nothing prepared me for the brilliant music by Yuzo Koshiro! Still listen to it after so many years.
Definitely Heroes 3 of might and magic!

It was the first game my brother and I really got into when we were young.
There are so many memorable tracks from the game, including the iconic menu theme, town screen music of Castle and Tower, and even the short little introductory fanfare that first pops up on the setup screen when you put the CD in!

It really was very formative for me, and has influenced my taste in music too.
Overall, Heroes 3 just does an amazing job of utilizing sound effects, for almost every action, such as picking up a resource on a map, or even the gentle clicking sound of a mouse click. No other game has achieved the same level of mastery, in my opinion.
Man, in the end I've got to go with the soundtrack for Fallout 4. While it may not be my favorite video game (or even my favorite game in the Fallout series) it was my introduction into the Fallout series. I love both the original "soundtrack" songs and the songs that play on Diamond City Radio; I've actually bought some Tex Beneke and Andrews Sisters vinyls just because of how much I loved their songs from Fallout. Of course, the songs written for Fallout 4 are super good too; I used to listen to the main theme while I slept. Other soundtracks I love include Minecraft, Hyper Light Drifter, Super Mario Galaxy, Metal Gear Rising, and Undertale (although I promise, I don't even use Tumblr).
Assassin's Creed II

The atmosphere, the story, the new, then-revolutionary game mechanics... they all contributed to having a soft spot in many people's heart for this game.
The beautiful soundtrack composed by Jesper Kyd helped me to get fully immersed in that game. I cared about the characters, I felt sad, I felt relief. It was an emotional roller coaster and that's awesome.

Ezio's Family is such an iconic tune it outgrew Assassin's Creed II, it's featured in the latest (Valhalla) installment too. Hearing the original one I still get goosebumps and a little sad because I know Ezio's story is over.
I haven't played the game for several years now but this track and Venice Rooftops are still in my ear. After hearing the first 2 seconds of them it clicks in my head and I can hum most of them from memory.

The song is scary and at the same time very positive. creates a very interesting emotional state in me
System Shock 2 has a pretty good soundtrack. Kinda creepy, kinda ambient. You can listen on youtube, and you get a copy when you buy the game on gog.
My best video game soundtrack must be "Theme Of Laura" from Silent Hill 2, it always gets under my skin and fills me with dread, but also hope and joy, its a weird feeling
Very easy to answer....The Witcher 3 DLC Blood & Wine.

I dont think in all my years of gaming....since 1978....have I heard a more haunting and immersive sound track. The music of Toussaint blew my mind upon hearing it. It was the first time in years I haven't turned the music down or off completely. In fact I turned it all the way up. Beautiful. I felt like I was actually in a fantasy land with Geralt. Just amazing . The composer should get an award.

Im worried now that other games and their music will always let me down since playing it.
