This isn't a question about what your favourite game is, and therefore what game you'd want to see a remake of. To be honest, a lot of my favourite GOG games are fine the way they are, and don't really need a remake. This is more for games that either you think have potential but are hampered by their age, or that you love but think they are too inaccessible to others because of their age.

My candidate?

Ultima IV. A really cool game with some really fascinating concepts and some impressive world-building, but unfortunately rendered almost unplayable by incredibly dated graphics (that were pretty bad even for the time) and, more importantly, one of the most counter-intuitive UIs I've ever seen in a game. A nice overhaul of the game could work wonders, I think.


Runners-up:

Master of Magic

Might and Magic: World of Xeen

Both runners up not because they're worse games, but because they're more playable.

MoM would be great. I know that Master of Orion is having a remake of sorts through a Kickstarter named M.O.R.E.

I don't know about specifics but any pre-90s game with non-intuitive UIs and brutal beginnings could very well be a candidate for a great remake.

Gabriel Knight 1! The game is perfect, but I think it's due for an HD upgrade similar to the first two Monkey Island games.

To see GK! in HD would be awesome. During Jane Jensen's Kickstarter I was drooling when she presented those HD pics of original GK art.
I'd also say Master of Orion (1) but with M.O.R.E. funded, who knows. I hope it's good :)
The first Thief game
Personally I don't care a lot about graphics, old games still have often very good designed graphics. What a lot of games do need is an interface update.

The best example being early RTS games, where you manually had to select every action ... Similar issues plague many rpgs.
Normally I would write something like Simon just did, but I found myself really enjoying the Monkey Island remakes. More adventure game updates like that would be really cool.

Also really early 3D stuff, like say Jedi Knight, Thief and Monkey Island 4...
Mostly i don't care about graphics. And am frustrated to loose content and depth in TBS games for silly 3D figit animations. But MOM is just a blurry mess to me.
