Could have been great
Now that I want.
Not as original as the OP and I have no idea if they'd have been good games, I like the look of their 2D predecessors better, but at that time it was kind of disappointing that they got canceled nevertheless:

Full Throttle - Hell On Wheels (wiki
Sam & Max - Freelance Police (wiki)

In hindsight though, if they'd have ended up like Escape from Monkey Island, it was probably for the better ...

Crosmando: Just so you know, Troika was going to buy the Fallout license (with the backing of a publisher) when Interplay were selling it, it would be a sequel by the original developers (Tim Cain, Boyarsky, Anderson) but the asking price was apparently too high. Then Bethesda swooped in and got it :(
There were - and still are - so many better hands to hold Fallout rights...
For now it looks like we will make a full circle, from the first Fallout being planned as a sequel to Wasteland to Wasteland providing us real Fallout feel.

hunvagy: Star Trek: Secret of the Vulcan Fury anyone?

Wow. I misread "Star Trek: Secret of the VATICAN fury"

I was like "What the heck?!?" for a few seconds. :D

A greek company had started working on an fps set in modern times where greek mythological creatures would start breaching through our universe. The design and trailer went well. The company collapse and the project exploded.

I mourn.
Wasn't this one an action adventure, planned by Luca$ Arse for 'wider audience'?
I think Full Throttle: Payback was the real sequel (that is, point and click).
Ice Nine for PS2

I remember wanting this game but sadly it never came out

That seems to be the case: http://www.unseen64.net/2010/07/27/full-throttle-2-payback-pc-ps2-cancelled/

I'm actually pretty happy Hell of Feels fell flat, it doesn't look all that great.
Seconding Van Buren and Warcraft Adventures (if only because of Clancy Brown) and adding Legacy of Kain: The Dark Prophecy and Werewolf: The Apocalypse - Heart of Gaia. :(

Ah, my bad. I only found this video and thought that was for the p&c game. Tthat explains why there's a Playstation logo at the end (although Escape from Monkey Island had a PS2 port, too).
There also was that untitled Indiana Jones action game, which promised more intelligent AI, breakable environments and stuff. I don't kwow if the game would have acually been all that great, but hey, it's Indy. Game footage starts around 1:30

This one looks like 'Indiana Jones meets Fighting Force' :)
But the last IJ game I enjoyed was Infernal Machine, so I might be biased.
My inner fanboy still mourns the loss of Babylon 5: Into the Fire.

It wasn't only the graphics which were very impressive in 2005 when it came to light that it was under development, the idea for the story sounded amazing as well. If I remember right they were going to have a large world to explore with crazy large scale battles you took part in. Its a real shame intel bought them and not a publisher.
