I was never easter egg hunter, but the one I found by accident, and one I remeber to this day is from GTA: SA - on the top of the bridge there is written "there is no easter here"

Back when I was 10 years old I found this one by mistake goofing around.

In Thief 2, The mission 3 - Framed, throw a scouting orb over the fenced wall at the beginning of the mission and you will see 2 zombies dancing.

One of the coolest easter eggs from some of my favorite pc games of all time <3

Originally, Doom 1 E1M4 level had a swastika shape inside it. Later versions, It was patched to make it less obvious.
Not sure it counts as an Easter egg since it's fairly obvious, but I love the fact that you can play Maniac Mansion in Day of the Tentacle.
In the video game Witcher 3, the unexpected Star Wars easter egg was a total delight. :)

In the side quest called 'The Sad Tale of the Grossbart Brothers', you come across the bounty hunter by the name Djenge Frett which is basically a reference to the bounty hunter Jango Fett from Star Wars.

Not only does his name sound familiar to Jango Fett, he wears the same dark green armor clothes like the Star Wars bounty hunter.
Something that immediately comes to mind is the "Goober" (or in some games, "Super-Goober") award from multiple titles of the Might and Magic series. What do you have to do to get it? Oh, just fight and occasionally puzzle your way through the thoughest bonus the dungeon the game has to offer, and when you get to the end, the game just tells you: "Congratulations, you are now a (Super-)Goober." That's it, that's your reward for beating the hardest challenge the game has to offer (if you don't count the even more brutal Mega Dragon in some games). Honestly, it may look like an insult at first, but after all the things you have to get through to get it, it just becomes hilariously anti-climatic. Especially when you get it after also getting it in an earlier game, and you realise that they've made a running gag of messing with you. And still, it's a proof that you've mastered the game, so probably this is the only instance where one can be proud of being called a (Super-)Goober.

The news comment about the "Giant Creature that washed up on the coast"(reference to H.P. Lovercraft and Cthulhu)
The name of the the Nosferatu intranet"Schrecknet"- Max Schreck played Nosferatu in the original vampire movie.
I recently played Ghostrunner and OMG! I thought I'm playing a first person Hotline Miami and then I found dead guy with a rooster mask. That was clearly the inspiration for devs and I hope one day GR 2 as well as HM3 will git the shelves.
There is a cool Star Wars Easter Egg in Skyrim - you see a skeleton hanging upside down in ice, referencing Luke in The Empire Strikes Back.

Witcher III was (and probably still is) a bottomless mine of easter eggs and various tropes to many popular works. I had hard time to decide between Solaris (sci-fi novel by Stanislaw Lem) reference and the other one, which goes like this:

Eskiel and Gerald was about to swim across the lake near Kaer Moren, when the former tried to "charm" Gerald with his skill in rhyming poetry (IIRC he was mocking him). Gerald replied to Eskiel by saying his piece, namely: "Eskiel, Eskiel... you d*ck" (roughly translating to English). I feel it was inspired by somehow famous and bit old short skit by 2 polish actors, Marian Opania and Krzysztof Kowalewski. Heres the original (Polish required):

This may not count as a secret or Easter Egg; it may be more of a coincidence, if anything, but I found my name in The Witcher III. This may not seem incredibly srange, but my name is very odd and I've only seen it used (other than in reference to myself) that one time. Unfortunately, the character who bears my name is trapped in an outhouse with some pretty horrible toilet problems. I guess that is my legacy.

Wolfenstein 3D Level - Wolfenstein: The New Order.

This ones for sleepy people – the kind who insist on resting in between bouts of saving the world. Once you find yourself at the safe house, bleary eyed and covered in sweat and the blood of your enemies, have a look around for a dirty mattress on the floor. Yes, it sounds like any student night, but in fact it’s your ticket to play a level of Wolfenstein 3D in The New Order’s engine, at the beginning of Chapter 5, BJ is brought to a safe house for the resistance against the Nazis. This house is filled with all kinds of great little secrets and bits of knowledge, but one easter egg rules over them all. On the top floor of the house is a cot with a poster of the 1992 game, Wolfenstein 3D, hanging over it. If the player chooses to enter the 'Nightmare', they will be transported into a dream -- the first level of Wolfenstein 3D, retro graphics and all.The level maintains many of Wolfenstein: The New Order's mechanics, such as lean, an active HUD, and regenerating health, but is otherwise identical to Wolfenstein 3D. The players will only have access to a Pistol at the beginning, but can find an Assault Rifle in a secret room.Like the original map, this secret level contains many hidden rooms (which you can see me attempting to locate), as well as dozens of Nazis ripe for the killing.

Blazkowicz retains his modern model, along with some pickups, but everything else looks like a hyper-focused version of the original. It’s one of my all-time favourite secret/easter egg in a game.
