My favorite easter egg, is Algernon from Fallout 2, who is a reference to the "Flowers of Algernon" short story.

Basically, in New Reno there's a vendor that is able to upgrade a couple of low tier weapons. However if you snoop around, hidden in the basement you come across Algernon, who is unable to speak, but becomes extremely excited/agitated when he sees your weapons. He is the only NPC in the game that is able to upgrade all "upgradable weapons".

It's my favorite, first because I figured it out for myself, due to having seen the TV film Flowers for Algernon just a couple of days before coming across the character.

And second because you can abuse his tallents, since he returns the upgraded weapon with a full magazine of ammo. So you can give him an empty weapon, and gain an upgraded weapon and a magazine of ammo. More so, flamethrower fuel come in packs of 10 fuel. But a flamethrower has a canister for only 5 fuel. So you can load a flamethrower with ammo. Then unload it, give Algernon only 5 fuel, and after he upgrades it, he will return to you 10 fuel.
My favorite easter egg has to be Legend of Grimrock II's secret to the secret ending, which happens to be the most elaborate secret I have heard of, so bear with me!

After defeating the final boss in Legend of Grimrock II, rather than escaping the island (which was the goal of your party), the party can head back and unlock a fight with the trickster (a secret boss who has been watching you closely throughout the game). (As a sidenote: unlocking the trickster is a complicated secret on it's own, requiring you to pay close attention to the lore notes found and making a clever deduction of the use of the magic system.)
Cornering and defeating the trickster, he is revealed to be the island master, a character of great importance to the location. Upon defeating the island master the party now takes his place and a final cutscene plays.

This is where the final secret starts!
As part of the final cutscene a book is shown, flipping through it's pages. On it's pages are texts comprised of symbols that can be decrypted into english!
The final pages of the book show the locations of Legend of Grimrock I and II, where the location of LoG II is left with a cryptic hint "The one who knows you have been lied to." and foreign words that indicate directions and movement recognised from one of the game's puzzles.
Throughout the game, the player has been guided by Stone Philosopher, inanimate stone faces giving hints. Constrastingly, one of these Stone Philosopher said something that at the time had no meaning, starting a statement with "You have been mislead. ...".
Bearing the cryptic hint from the ending cutscene in mind, returning to the location of this Stone Philosopher and using the clue of movement directions, you end up on a location, where if dug 3 times reveals the final secret; a cube alike the final boss of LoG I!

To find the secret final boss already maximally tests your attention to detail, knowledge of the lore found in game and deductive skills. On top of that to get to the final secret, you are required to pay extremely close attention to the final cutscene, translating a made up writing system and remembering every detail of the game.
That is what makes this the greatest secret of any game to me.
The 1992 Amiga game Premiere features a reference to the 1902 film Le Voyage Dans La Lune in which a space capsule crashes into the moon. The famous image of the rocket in the eye of the moon can be seen in the background of the sci-fi movie themed level.

One of my favorite Easter eggs in game, its when Ciri from The Witcher 3 mentions a realm where people "had metal in their heads, waged war from a distance, using things similar to megascopes. And there were no horses, everyone had their own flying ship instead."And also in Cyberpunk 2077, Ciri appears on a magazine cover, bringing the Easter egg full circle

In Drakan : The Order of the Flame, you can find a cavern which is Gollum's lair. If you kill him, you will receive the Gollum's potion (invisibility) and a sword named Sting. This Easter egg is a reference to The Hobbit !
The naked showering lady behind the waterfall in Shadow Warrior 2013 edition, wich is an reference to its old game from 1997
Dying light, during the Rupert the gunsmith side quest you come across a pink teddy bear at the kindergarten in old town. if you press its nose will tell you to stop doing that, if you continue to press the nose its expression will get angrier and its eyes will slowly redder until finally it will explode knocking you back, pointless but funny.
Finding out that we could play Maniac Mansion from inside Day of the Tentacle just blew my friends' and my minds when I was young.
There may be more obscure or interesting Easter Eggs since, but the Doom 2 John Romero boss Easter egg still gives me fond memories. I'm sure nostalgia is in there, and it being one of the first video game Easter eggs I ran across. The Wizard of Oz comparisons are there. Plus it breaks the 4th wall in an interesting way, seeing the game dev responsible in more ways than one, and doing battle with him.
In Serious Sam First Encounter when you click on a certain door several humanoids with very large heads come out and walk around. They are supposed to represent the developers, I think. It is incredibly funny and surprising the firts time.
And Saint Mannox of Troika raised the Book of Arcanum up on high, saying:

"O great Nasrudin, bless this thy Spellbook, that with it we may carve our enemies into tiny bits, in Thy mercy!"

And Nasrudin didst speak, saying:

"First shalt thou get thy Magickal Aptitude up to the fullest.

"Then must thou learn Succour Beast, the fourth spell in the College of Nature.

"Thou must count to the fourth spell, and not less.

"Four shall be the number of spells thou shalt count, and the number of the counting shall be four.

"Thou shalt not learn the second or third spell, excepting that thou then proceed to four.

"Five is not necessarily right out, but neither is it necessary.

"Once the fourth spell is reached, thou mayest cast it at thy foes, and there shall appear before them a small white rabbit.

"This unassuming creature is in fact the Killer Rabbit of Caerbannog, and it shall pour My wrath down upon thy foes; who, having been naughty in My sight, shall be snuffed by it."

And Saint Mannox replied, "Amen."

I always loved the Easter Eggs in portal 2 that show the mad ramblings of a scientist hidden behind some of the walls in the game, it isn't just cool it also provides so much lore and world building!!!

A second choice would be finding a Roach sticker on my car in Cyberpunk, it's only a small detail but it made me laugh and gave me a weird emotianl attachment to the starting car lmao
