My first though is to ignore the monsters to an extent and find a magic user if I can't be one.
Let's open up a travel agency via portals. Mostly safe, Eco-friendly, inmediate! Easy to escape those beasts too.
Planning vacation? I will be your person. Wanna hunt nekkers on that town you just saw on the news? Contact me. I can do an in and out. You just wish to do a safari-like tour to see the griffin in the wild? I will do better than those of the Mutual of Beauclair's Wild Kingdom's amateurs...

Though the realistic answer would be:
New creatures will have it rough in our actual world but they are adaptable. We humans, are too, though.

If there's chaos entering our world with the conjuction, I will find out if I'm gifted and learn to use it.
Being a sorceress sound appealing despite the bad issues coming along with it.
If I end being a normal human, I will put my effort on learning signs at last.
Either way I can defend myself and my closest ones until a witcher appears to do their work. If not a witcher, scientist I am sure will come with some destructive weapon to use against each new beast.

If the cataclysm throw at us just monsters and no magic to defend ourselves from them...well, there's the knoweledge! The bestiary. Vesemir knew knowing your adversary is top in the list. Leave the monsters who mean no harm leave. Arm yourself fitting to face the vicious ones. If you plan your strategy well enough, you can beat them even with your kitchen stuff. You must be fast though. So I would plan to be

If everything fails.... I will become a Banshee or a Wight (depending on the way I die) so I will enlarge their ranks, I suppose. So I will roam my homeland until someone or something kill me a second time. Though until then, I will intend to be a helluva of a magic being, monster, creature, or whatever.
1. Survive.
2. Learn magic (or maybe become a Witcher)
3. Profit!
Surely I'd gather my party before venturing forth!
GO FOR THE EYES!!! AARRRGHH!!!
I'd chill at home and play some videogames maybe, I mean I'd have an excuse not to go to work :D. Also I'd put up a glowy exclamation mark above my head and wait for adventurers to come to me and ask me what I need done. That's how people in monster infested lands solve all their problems and get their errands and chores done instead of doing it themselves. And no worry about rewards, it's not like you need to give the adventurer something actually valuable in return because they'd either leave it in their inventory until the end of days, or they'd sell it for any price just to get rid of it :D

I would summom Kame Sen'nin (Muten Rōshi (from the Dragon Ball series)) to get drunk. Cheers!
Pick up the sword, don the armour, brew some elixirs and get ready to face the monsters... Wait, I don't have a sword or armour, I don't know how to brew potions and I don't even know how to fight - well then, I guess I'll just die.
First, I'd gather all weapons and tools that can be turned into one around the house and fortify myself as best I could, then write a Will, containing that upon my demise, finders of my body have it filled with poison and toss it to some vicious beast they can't really handle, so I could take a few with me from beyond the grave.

Once the Will is done, I'd go to some supermarket for food, armed and in numbers, and see if it wasn't already picked clean, for I think people would be fighting each other for supplies just as much as this new unknown threat. As I see in the first few days panic and chaos would ensue making almost all law and order cease, until humanity realized this is a full-scale, Planet-wide war, where every last man matters, so the militaries stared gathering all survivors from all areas. That's what we all had to wait out, or hold out until they gather the people, from then on they'd tell you what to do, they would not leave any other choice either, with us or against us. That's how it could work, to stand united as never before without any Divide and Conquer strategies for past or present grievances or we end up like the Elves in the world of the Witcher.

Then the united militaries of Earth would have a wide range of weaponry that can pack a punch at most land and air creatures and I don't just mean the various guns, tanks and helicoptes, but also rockets sand CBRN weaponry, most of which are banned true, but that doesn't mean the militaries don't have them in some backwater depots. And if they could use them on each other they could surely give a taste to this new threat. The problem would be the areas unpopulated by man like deserts, Syberia, jungles, mountain peaks, underground places and the hardest water and underwater. In these areas we'd have limited options, probably best leaving them be until they get too close to human authority.

With the sentient species reaching peace would be most ideal for they'd no longer be a threat, could help in the fight against the primal ones and could learn a thing or two from them.

Wouldn't rely on magic one bit, because even if some got aptitude for it, they would be untrained and lacking the masters that could help them and we've seen in the books that mages can die to it's excess use even if they possessed centuries of magical training .

Silver, I think would be essential to fight monsters that have the ability to dematerialize themselves like Spectrals and some Vampires. Other monsters could be fought using standard weapons, though might not as effectively.

This war would be long and hard, even until humanity could stabilize it's presence in their formally dominated world, not to mention the difficulty if the gates didn't close.

At first, I would go into the local shops and buy 1) a good set of armor, 2) weapons of all kinds, and 3) from a local party shop I would buy a bunch of monster costumes to hide among them. ;)

Over a longer period, I would start to study magic: while the conjunction of the spheres introduced monsters into the world, it also introduced magic into the world, and I would seek to become a scholar of the new magical force to help everyone's chances of survival.
I will hold my wepon very tight and kill all monsters :)
I think the sensible thing to do would be to take up a collection among the good folk of the town in order to hire a Witcher to protect us.
