I only see two problems here:
First, Steam lacks something that give developers something that can officially mark them as one. The only thing is the alternative colour in discusison boards of their games on Steam.
Second, this is another case of overprotection. Valve has implemented so many things like double, triple confirmations on trades that have to be done with external apps because people were dumb enough to accept shady deals and got scammed. Now, to protect dumb people who believe everything they contact people that have something between brackets in their name. As far as I know there is nothing that says that you can/will identify a developer through such a bracket.

tinyE: you think Steam lied about being told by GOG to tell him to change it?

I'm not saying that's impossible, I just can't see why Steam would be so embarrassed they'd feel the need to lie about the request.
Not Steam, a single Mod, who may or may not have acted in the name of GOG and/or Valve.

CharlesGrey: The fuck, they wouldn't let you use GOGUser either? ( Not like I have any idea what a GOGU ser is... )

Is it confirmed that GOG was ever even involved in this? I'm starting to think that maybe it's just a Valve worshiping moderator on a power trip, who doesn't like seeing "GOG" name tags on their Steam forums.

PookaMustard: One theory is that Steam support did it anyway just to be safe. And did it stupidly as well. As for confirmation, no idea honestly. We have but Valve's word on it.

Actually it might fit with something I noticed in a trading group before. They banned posting trades about Origin keys on the group's forums: you had to offer them in their group chat instead. If this is related, and this Valve moderator here is that scummy, that would explain it. But even though I just, despise Valve that much, I honestly don't think a moderator could stoop this low.
Oh I've met some really shitty Steam Mods.

Instead of messing around with you, Maybe they should do something about this abuse.
