I've always loved the King's Quest: Mask of Eternity soundtrack. I know many people don't like the actual gameplay, but there's nothing quite like the music. It's some of the best fantasy music and it sets a whimsical but dark mood. I just wish the tracks were longer so I could play them as background music while reading. My favorite tracks are Daventry, People of Daventry, Wizard, Sylph, The Boatman, and The Dimension of Death. I know it was never released as an official soundtrack, but the music is available to listen to on YouTube.

I find Baldur's Gate (I and II) to be the best soundtrack ever. I am listening to it all the time when I need to focus (coding at work, study, etc...). It just brings me to a serene place, without any interference.
StarCraft BroodWar intro music because it was the first to spawn international competitions thus creating eSports and has created a culture that still love and play the game today.
For me it is the Fallout 1 Soundtrack. I played this game in 97 in a small dark room in the basement. And this OST is so eerie, it is forever burnt in my memories.
You're asking a lot for just one soundtrack. But here's one with some story behind it. When I was in high school one of my at the time friends had the Icewind Dale 2 Collector's Edition - I borrowed it from him, and it had the soundtrack. This was back when burning CDs was a thing so I burned a copy of the soundtrack, and I would play that on a CD player at night to get to sleep on repeat. Now I have so many more choices, but fond memories of this.

Well this is an easy one for me! Has to be Final Fantasy 9! It was quirky and light hearted where it needed and somber/serious when things start escalating. The soundtrack makes this game the legend it is today.
Stronghold 1 soundtrack. I like medieval games with great music. In the link below is my favorite part. The girls voice is incredible.

Which video game soundtrack is the most memorable to you and why?

The OST to Vietcong (unfortunately still not available here...nudge, nudge, wink, wink).

Why? Because the music was so reminiscent to the 60s chart hits, that everyone associates with the Vietnam War, that you felt like you'd re-enact "Platoon", or "Hamburger Hill", or "Tour of Duty".
Doom Eternal's soundtrack is awesome. It gets you going in the game. I recommend listening to it on any of your music players.
Chrono Trigger.
This masterful ost by Yasunori Mitsuda and the legend Nobuo Uematsu is full of great songs , especiallyfor the limitations the Snes had! It does a great job at conveying the situation, whether it be the calm of your home, the tone of that eras overworld map, the exciting adventure and danger, to the wonder of a long gone, magical civilization. Call it nostalgia, but I can't help but be swept up in the emotional journey of the OST every time I listen to it.
The most memorable video game soundtrack to me is Beyond Good & Evil. I bought it shortly after it came out, as a kid. Everything made a big impression on me. The gameplay, setting, characters.. and the soundtrack. Especially the "Home Sweet Home" track. I still think it's one of the most original games I have played, and it has a excellent, fitting soundtrack. I have lost count of how many times I finished it back then.. I also remember discovering the Norwegian band Briskeby when searching for a in-game song called "Propaganda", hah.

The most enjoyable for me is the one from Expeditions: Vikings, with Battle of Wesnoth a close second. However Warcraft2 is probably the first one I found truly memorable.
What game music stands out the most is Runescape. This is so because there are a lot of tracks. They become unlocked when you explore different areas. Once unlocked you can listen to them anytime. This may have been one of the first online PC games I played.
I might pretty much be an outlier here, but i absolutely adored the music of the PS2 Ace Combat games, with Ace Combat Zero´s "Zero" absolutely taking the cake. In my opinion one of the greatest pieces of music ever created and matching the whole knights of the sky theme the game is going for perfectly
