I'm going to go with a console game and say Final Fantasy VI! The operatic and symphonic influences make for a supremely memorable soundtrack. The theme that plays over the final boss is easily one of the best tracks in a video game ever.
I absolutely adore the chiptune music of Pokemon Gold/Silver/Crystal. The world of Pokemon was my escape as a child and I love those games as much now as I did then. It's hard to believe they could capture so much with such a limited soundscape.

Also honestly Heroes III has one of the best orchestral soundtracks of any game ever. Period. I think that the Fortress theme has to be my favourite!
Skyrim had the most effective and scary music for me. With decent headphones, there were always footsteps behind you in the caves, and random coughs in the silence which nearly sent me to the roof. The sound and music creation was immense and covered so much.
I always liked the donkey kong country OST, most Rare games had fun music.
Both my favorite music and this music and the game itself is civilization 4. I have been playing it for over ten years and I still don't get bored.
The most memorable video game soundtrack for me has to be the Minecraft soundtrack.
Not in contest because i don't have anything to play vinyl on currently and because i can't really choose one single game, nor am i good at describing why.

However, two of my top contestants are HOMM2 and HOMM3. However, then there's the Last Ninja series from back in the 80s. And Mechwarrior 2 and MW2 Mercenaries.
Not to forget Lotus esprit turbo challenge I. The Lost patrol. Pinball Illusions/Dreams/Fantasies. Turrican I/II.

Far too many great game musics over the decades to decide on a single top one...
To me the most memorable soundtrack belongs to Omikron: The NomadSoul. It was the first time I listened to a game that had the musical work of a mayor artist, in this case David Bowie. The music really set the environment and mood of the game, and it was great music for listening. The game was somewhat open world, so I would wander around just to listen to the soundtrack.

The soundtrack for Ocarina of Time is probably the most memorable as it is not only fantastic and interweaved well into the narrative but also is a main and useful mechanic in the gameplay. The method of using music in a repetitive game mechanic to effectively establish leitmotifs that are used in the rest of the soundtrack for story moments is incredible.
Final Fantasy VIII. It's the soundtrack that got me into to soundtracks. My high school boyfriend gave it to me as a gift and, I don't know why, but until then it had never occurred to me that video games had soundtracks you could listen to without playing the actual game. Opened a huge can of worms for me and I'm forever grateful to him.
My most memorable soundtrack is Final Fantasy VII. This was the first time that I really resonated with a soundtrack to wanting to listen to it outside of the game, as it wasn't easy to get all the music for me back then, so when I did I listened to it all the time, everywhere. I still listen to it now, when I'm chilling, when I'm out running, there's just such a great variety to it and it all has so much meaning to me from memories of playing the game, the characters, the stories, certain scenes that were really painful or exciting. Really just the feelings it evokes, definitely the most memorable soundtack to me.
My most memorable soundtrack has to be the fields of ard skellig in The Witcher 3. It has great composition and a great singer!

If we're talking strictly homm3 though my top choice would be the Rampart theme. So peaceful!
The soundtrack I remember the most is from the game "Outlaws". The machine I had at the time couldn't run the game well, and on one level multiple enemies surrounded me and the music changed to an epic theme as everything slowed down. The whole moment was a natural bullettime before it was used in the MaxPayne game, it was amazing to aim and shoot in slow motion while that song was playing.
For me it's going to be Mass Effect 3 OST. I really bonded with the characters over 3 parts of this game, and moment when you talk with Anderson for the last time before he dies, it really got to me. Music playing in the background is kind of burned in my mind ever since, it was so beautiful.
For me it is F-Zero (SNES). I have fond memories of making my own bootleg soundtrack of the came audio to listen to on my Walkman. :D
