I hope I haven't to point out to GOG how ridiculous this is! (I'm doing it nevertheless, just in case!)

1) Deinstallation of GOG Galaxy (using Windows 10 "Apps & Features")
-> Yes, this step deletes all your settings and current meta information about which games you have installed, so your game library will be empty once you re-install gog
2) Goto https://www.gog.com/en/game/baldurs_gate_iii, login to GOG
3) "Go to my library" button appears (should appear ...)
4) Select "Download and install now" (big blue button ...)
5) GOG Galaxy gets installed with a hint that BG 3 is getting installed afterwards
6) BG 3 installation (the real one, 108.40 GB version) starts
7) Use the hours of downloads to restore your settings as everything is gone
