In general, there are only a few things that you really NEED to keep holding on to past their obvious usefulness.

Minor spoilers ahead.

Bronze Sphere
Blade of the Immortal
Intestines
Wedding Ring
Junk (just need one)
Note from Penn (not mandatory, but it gets you a nice extra dialog line)

Other than that, you can pretty much dump all the random stuff once it's clear that the quest is over. There may be another one or two that I've forgotten, but most of the stuff can be safely dropped.

Also, the number of times that you die has an effect on how many monsters spawn in the final dungeon, but for the most part, don't worry about it. It's relatively minor, and you won't have to worry about being swarmed even if you die a hundred times.
oh ok, wasn't sure about my intestines :D
I don't think CHA is really all that useful.

I don't want to give out any spoilers here, but AFAIK there are only three dialogs in the whole game (none of which is so important to justify dumping points in an otherwise useless stat) that require charisma and can't be solved with a different stat.

I mean, everyone says 'OMG CHA, PST is dialog heavy pump CHA' but WIS solves the majority of dialogs and INT gets most of the rest, which leaves a smattering of STR and the odd DEX/CON check.

The majority of the advantage of CHA is better prices in shops (I don't think coin is that big of a problem) as well as better quest rewards from some quests (nothing major here).

In any case, more then 16 CHA is pretty much a total waste (AFAIK there's only one thing that needs more then that, and there's a decent chance a new player will never see it).

Edit: this is based on the vanilla game. Some of the various mods might change it, I'm not really sure.

Spoiler Alert

The only real need for CHR early on is in talking with Pharod and you need 14 CHR to get out making a promise to him. And you need a CHR of 13 to feign death for some XP. As far as I know the only other benefit in CHR is in faking your way into various factions.

Also an INT of 15 should do the trink. Yes you need 18 for Drak 8th circle but you can bump it up with 3 charms. Also you can use charms to get to 18 for a quest in the dead nations. The 15 INT let's you fully understand the Dabus.

So you can make a decent fighter with starting stats of WIS 18, int 12 (get next 3 from levels), CON 14 and DEX 13. The DEX let's you snap necks and stop thieves. No more are needed there. If you decide to ignore CHR you can pump up STR and CON after putting 3 more in INT. Get the lvl 7 & 12 bonus for fighting and your should have a real good fighter.

I would get CON and STR to 18 then pump WIS to 22 (use tatoos for the other 3). I think doing it this way you get about 97%+ of the quests and dialog options.
