Nice review, some comments:
Haste in the original IWD works like mass improved haste in BG2, doubling the attacks per round. The limit is 5 attacks unhasted and 10 attacks hasted (it's not capped at 5 as the manual says).
The strength raising by only one step (18/99 to 18/00 for example) is intended, not a bug. Works the same with the "draw upon holy might" spell there and at character creation in Planescape:Torment.
I guess one reason for your game being to easy was that you chose a difficulty that gave double XP allowing your party to level up too fast and gain access to powerful options not intended to be available that early.
