Licurg: Sacrifice - it's one of the best games ever made, it has unique gameplay, and it's only 5$ right now .
The $5.99 GOG code is unfortunately only good for games with a base price of $5.99, thus Sacrifice is not an option.

I would recommend Postal and Blood if LP is your thing.

Yes, I once got a gift code of $9.99 and I couldn't purchase any game with a base price higher than $9.99, even when it was about $5 with the discount. It's why there are people clamoring for some form of coins like GamersGate or some wallet like Steam. GOG said that store credit is currently in the works, but we'll see if it has been implemented till the end of this year.

How about Outcast? It's one of the (seemingly) few open world games that that isn't set in A: Ye olde generic medieval times or B: Modern-ish major city. The soundtrack alone is worth $5.99 in my opinion.
