Nor the supplier, nor the purchaser, nor the cook could make anyone in the business believe this was an error. Escolar is white, but not tuna. White tuna is tuna, but not white. The former has a compact flesh. The smell and taste are very different. If it tastes buttery and has a full fatty flavour, stop eating it asap.

It's hard to know since in Malaysia people rarely eat tuna ( we all prefer different kind of fish), so this is kind of hotel only menu. And cooked food it looks like squares of fish meat. It was labelled 'White Tuna'.

But if you read the wikipedia page, it being passed on as white tuna. I don't know.
