I'd say Monkey Island or Monkey Island 2, but those are too obvious. So instead, a game that maybe fewer people have played:
Eric the Unready.
It had an awesome sense of humour (I'd rank it up there as one of the most consistently funny games ever), fun exploration, hilarious story, and reasonable puzzles. What more could you ask for in an adventure game?

This may be a bit biased but the first point and click adventure I played was The Secret of the Monkey Island and I think it´s one of the best adventures ever, one of the first games I actually played when I got an Amiga 500. The humour was top notch and it was a pirate adventure, who doesn´t like a piratey adventure yar!..........and there was grog.

I'm in for Gabriel Knights, thank you for the opportunity. Most memorable, probably original Monkey Island. Trying to work out some of those interactions back then was rather challenging, especially the sword fight.

The series of adventure games that I had the most fun with was Monkey Island(the first three). Like most, I started playing Monkey Island 3 because of the beautiful hand-drawn art, but I finished it because of the humorous story. Then I tried and finished Monkey Island 1+2, despite of the pixelated game art, and all because of the excellent game design. That's a lesson that every game designer should have learned by now, a well designed game endures, while technologically revolutionary games become obsolete and are forgotten.

I'm in for Primordia. :-) Very curious about this game, I never played a Wadjet Eye game, but I've heard a lot of good things about them, and this one in particular. Already have GK1, an absolute classic, love it!

My very first computer game was King's Quest IV waaaaaay back in 1989 and it got me hooked to gaming and adventure games in particular. I was still very young at the time and only had a very basic knowledge of English, so I played this game with a dictionary next to me lolz. But the plot, the puzzles, the graphics, the music, they all were so intriguing that I couldn't stop playing that game. Afterwards I hunted down every Sierra adventure game I could find. For a long time that little Sierra mountain logo on a new game release in stores was all it took for me to get all giddy, grab it, run home (well, after paying for it of course ;-) ) and get immersed again in a new Sierra adventure. Only much, much later I also started playing non-Sierra adventures, and while I love a whole bunch of them, they never quite captured that same magic the Sierra games had. Ah nostalgia, it's a crazy thing. ;-)
I'm in for the Primordia game.

I just discovered GOG recently, and I played "Beneath a Steel Sky" which was a lot of fun! Totally re-ignited my interest in adventure games. Of adventure games I've played in the past, Monkey Island (first one I think) and Rex Nebular first leap to mind.
