I got into it through Dredmor but went from that straight to Tome4 pretty fast. Definitely one of the best games I've played, it's so nice to have a challenge for once ;)

Dwarf fortress is another one that I've been meaning to get into, though it looks intimidating (not a classic RL but close enuff)
Dungeon crawl stone soup is my favorite.
Even though I like RPG Roguelikes, I really love non RPG games with roguelike elements. My favorite games with roguelike elements so far that I have played are FTL and Desktop Dungeons!

I used to love the Rogue on the Speccy.
I tried an emulated version last year & really struggled with it!

Basically : randomized dungeons, turn-based, minimalist graphics, ruthless permadeath, and some amount of gameplay depth (huge amount of potions, monsters, spells, stats). Originally in ascii maps, later with little tile icons that makes its more straightforward visually readable than simple symbol equivalences, but that's just a cosmetic change (that psychopathological purists resent).

ADOM is one of my favourite games ever. I've led many, many characters to victory, and hundreds to their horrible death. Not an easy game, but it has that certain something I couldn't find in other roguelikes.

Also, because of the recent very successful crowdfunding campaign, the sequel development is in full force, with various alphas being available to play. Also, he's been updating the original game, fixing tons of bugs, exploits and adding new content.
Can't wait.

As for other roguelikes, I've found DoomRL to be extremely well-made and playable, in spite of the seemingly silly premise.
Two interesting rogue-likes I've recently discovered are omega-rpg and gearhead.

Omega-rpg is an old rogue-like, but with factions you can join, quests (with certain factions) and a large above-ground area to explore. I only played it briefly but it was cool. You could join the gladiator faction and fight in the arena for experience, loot and glory! It isn't actively developed anymore, but available in a lot of GNU/Linux repositories. Gearhead (and its sequel Gearhead 2) is a mecha inspired rogue-like, where you get to fight with mecha robots! There are also various dungeons to explore, factions to join, missions to accept, and a number of mecha fighting tournaments to enter. More into here: http://www.gearheadrpg.com/
Well, I still play NetHack from time to time. But Castlevania-RL (RogueLike) is also nice and for Ultima Fans Drash-RL (Escape from Mount Drash Rogue-Like) might be worth a shot.
I play them from time to time. I like the fact that in 90% of all RL's, if you play smart and well, the game will reward you. Generally your death is because you did something really stupid, not the game screwing you.

My favorite RL story is a game I had in Cave of Qu,d. I had a four armed, heavy fur, badass warrior. I was just chewing through the game. I was just wandering around when I found a lake. For whatever reason, swimming in it sounded like a fun idea. I then got one of my arms nommed off by a shark-like creature. I was far away from a town, so I desperately tried to get back, but enemies started following me. In my weakened state I couldn't fight them off, and eventually fell to a hail of arrows and attackers.

Which is why I have problems with FTL where the game just flat out luck-screws you, and even Dredmor (which I love), in that sometimes the mechanics themselves screw you. Like flicking a switch and your mage gets teleported in the middle of six melee creatures to your death. And yes, that did happen to me.
