The last Roguelike I really got into was Moria on the Amiga.

Dungeons of Dredmor is on my wishlist. I bought FTL and its good, but I just prefer my crawling to be based in fantasy
Lately the only two roguelikes I play are ADOM 1.2.0 and ToME (finally at official 1.0, yay). Also FTL, if you really want to call that a roguelike rather than a roguelike... like.

Older favourites include DoomRL, , [url=http://lambdarogue.net/]LambdaRogue, Gearhead 1/Arena, 3059...
I used to play those all the time, especially Moria/Angband and its variants. The Nethack side branch never really grabbed me, despite having entertaining aspects and the pets I would always eventually die of starvation rather (way more than the monsters).
(Ironic that the very first one I ever played, Sword of Fargoal on the C64, had more for graphics than most of the ones I was into decades later).
It's been quite a few years now though, I don't have a desktop anymore and playing on a laptop without a keypad on the side just is not good enough for controlling them.
Brogue is an interesting more-or-less-direct descendant of Rogue, with entertainingly YASD-inducing systems for spreading fires and flooding corridors.
I strongly reccomend DoomRL. Just this.
Din's Curse seems an interesting option. Sorry not enough rep to post link to site or gog wishlist.
