Also RTS. Although the reason is more that I'm "meh" playing those and so I avoid them than that I "hate" the games per se.
That said, years ago I still put a lot of time in SSI's War Wind, which IMO wasn't just a WarCraft clone.
Dungeon Siege
I don't play point and click adventures very often but Full Throttle is awesome.

Also, I was never the Tetris guy back in the days and would rather play Street Fighter II or Warioland on my Game Boy. Somehow though I'm addicted to Bejeweled today.

I don't much like RTS, but I remember having a pretty good time with Warhammer 40K: Dawn of War.
Meh genre: FPS, and multiplayer FPS in particular

But I really enjoyed playing UT2003 at the time.

They're "too niche" because they're "too good".
What a strange and refreshing question. I suppose I’d have to say my ‘meh’ genre is racing, since there are barely any racing games to be found in my collection. Couldn't tell you why really, the prospect of going around a track a dozen times never appealed to me. Micro Machines, Diddy Kong Racing, and Outrun 2006: Coast to Coast are amongst my favourites.

Speedball, Chaos League, Blood Bowl, Mutant League Football, Brutal Sports football, Deathrow. Can’t get enough of that sports fantasy violence!

That is what I love about Most Wanted. You have the entire city to yourself to explore at will. In fact another awesome game that's even better in this regard is Test Drive Unlimted

Racing games have been quite 'meh' to me. With that said, I actually quite enjoyed the "Burnout" series mostly because of the ability to take-down your opponents vehicles.
