The most iconic for me is the music for The Last Ninja II. It really made the game near perfect. IMHO.
HOMM3 soundtrack has always been a favorite of mine, it’s perfect in every way! I still listen to it and covers of its tunes quite a lot.
I have also always had the Grim Fandango OST dear to me. It creates such an amazing atmosphere in the game, and plays a part in why it is my favorite game of all time.
For me HOMM3's music is maybe the best and most loved Game OST. However that's the easiest answer for this competition so I tried to think for something more recent.

And this recent OST is Axiom Verge's. The Colector's edition of the game is one of my favorite purchases mainly because it has the OST on a CD. The music Thomas Harp made for the game is magic. It helps you dive deeper and deeper in the experience of playing the game.
To me, it is Silent Hill 2's soundtrack. Power ballads flow into ambient music, which gets shifted for disturbing sad tones.

I love the Grim Fandango soundtrack, Smooth Hector is just so soothing to listen too.. Other songs are great too.
Jet Set Radio, it has the funkiest beats out there by a roller skated mile.
Though I love the mass effect sound track which does not stop from first game to the third, Final Fantyasy 14's sound track is sooo well done, i could listen to it for ages! Either of these games are great to do things around the house to and even great to keep you jamming while editing files or even writing a story... they pull you in and hold you through out!
Probably the Sims 1 soundtrack. I am 37 now, but I still love those cool piano tunes. They are truly timeless.
MSX The treasure of usas is one of the best 8bit soundrtrack ever. Listen to sega's megadrive original Thunderforce IV lightning strikes again to feel true power, but yeah Skyrim's got the enticing Dovakin's song. It really suits the game.
Gotta be the DIablo soundtracks. Those stuck with me. Deep, dark, foreboding. Memorable.
HOMM3 is unfortunately only on the second place of the best soundtracks out there.

The best soundtrack ever is the brilliant Last Ninja II score from Matt Gray. It is the only full soundtrack that I put on tape in my childhood and that I still regularly listen to even today.
Going by most memorable, and with fondest memory, the opening soundtrack from Super Mario Bros 3. That game provided some common ground between my dad and I, and it was the soundtrack that gave it away.

In the early 90’s when I was a kid, I looked up to my dad a lot. However, he worked long hours and we were really different personalities already then, so we didn’t really connect over a lot of things. He was the typical engineer while I was the absent-minded artist. Around -92 I got my first gaming console, a Nintendo 8-bit which came with Super Mario Bros 3. I absolutely loved the game and I was playing it constantly. In time, I noticed my dad would occasionally peek in through the door while I was playing. After a while I noticed that he himself started playing after I had gone to bed because I could hear the opening soundtrack, faintly, from the other room. For some reason, just hearing that, I felt really proud… not because I had done anything, but just because we were sharing an interest. Still, I never asked him about it because I was afraid to jinx it, and I’m sure he was feeling a bit stigmatized for playing video games as an adult in the early 90’s, so he never brought it up directly either. Even though we never played together, he ended up playing it a lot in the evenings and the soundtrack became almost like a lullaby for me during that time.
Christopher Larkin did an incredible job on Hollow Knight, it is filled with most beautiful serene music, but also packs a punch when music needs to, can't wait for the Silksong!
I'd have to go with the Starfleet Command 1 soundtrack by Ron Jones.
