It simply doesn't get much better than "SWAT 4". If you're not playing that during your anniversary party, you're missing out.
Age of Empires II, Co-Op vrs the hardest AI is always fun and a challange, you can always keep adding AI players till you reach your challange level.
I'm going for the obvious answer here and suggesting terraria, the game is a ton of fun co-op and the difficulty scales with the number of players, would love to watch the gog team do a full playthrough
Well, now that GOG has decided to allow DRM on their store, you might bring Portal 2 here. That's an awesome Co-op game and very fun to watch at parties too, how two friends annoy each other and trigger traps at just the 'wrong' moment. And cease to be friends.

But out of those games that are already here, Descent and Descent 2 are among the best co-op games and if the story mission isn't hard enough, there are lots of co-op and multiplayer maps out there in the internet to keep your party going for days!
Maybe not a traditional coop game, but I'd recommend a coop playthorugh of Baldurs Gate II in the advent of BG3.
It's a short play-through, but my top choice for co-op is Metal Slug X. It's an intense, exhilarating game with beautiful music and artwork. If you wanted to extend the gameplay, it's fun to marathon through the whole series, although it's a shame only the first three games seem to be available online.

Honestly, while there are a number of games that have co-op built in, nothing will beat the afternoons I spent playing the original Doom with a mate and, because I was the only one with a PC, playing it side by side with him on the same keyboard, where he was in control of the shooting and I was in control of the movement.

Fortunately, Doom has co-op as well, so that's my pick.
Broforce! I do enjoy all the explosions and bad guys running around yelling Broforce! Broforce!

In this Rose October, OVERCOOKED! 2 is the best option to play and free the Master Chief asleep in you cooperatively with your friends !
Diablo 1 - it still holds up due to sheer charm.
Hexplore would be a good one to do.
My mate and I recently got the new Age of Empires 2 Definitive Edition. Been playing it co-op, and with the free UHD DLC that you can get for it, it looks soooooo nice!!!
