For some reason we cannot edit the op, so it's hard for us to update the thread in the same way we do in the Steam thread (https://steamcommunity.com/app/727130/discussions/0/1744483505476938586/).
Anyways in GOG you don't need a thread to know the changes we made in every update. You can take a look at the whole change log using GOG Galaxy 2. In order to do so, go to Between the Stars, click in the options button that is located at the right of the play button and select "View patch notes". There you will see every changes we made in each update.

Not everyone uses the GOG Galaxy client - in case you're not aware of it, not every update pushed in the client is always reflected in the standalone installer(s), at least not in the same timely fashion. So, if one's not using the client, their version (standalone installer) isn't necessarily the same as the one when using the client.
Additionally, non-Galaxy users can't be certain if every update that gets a changelog in the "View patch notes" section there, is also listed in the changelog section of one's library on the site. For example, in the changelog section of one's library on the site, there's a changelog for v0.2.2.0.4.1, then for v0.4.7 and the next one is for v0.4.7.4, meanwhile the standalone installer was updated:
0.2.2.0.4.1 ⇒ 0.4.4 ⇒ 0.4.5 ⇒ 0.4.6 ⇒ 0.4.6.1 ⇒ 0.4.6.2 ⇒ 0.4.6.3 ⇒ 0.4.7.1 ⇒ 0.4.7.2 ⇒ 0.4.7.3 ⇒ 0.4.7.4.
If, as you say, one can see every change made in each update, can you see why a changelog thread by the devs/pubs in the forum can be useful?
2. Changelogs and latest version are not public info on GOG, so keeping a changelog thread here in the forum can support an educated decision when considering a purchase.
As for the difficulties you're facing keeping a changelog thread updated here - well, a number of devs/pubs do it a few different ways; for example, the devs/pubs of:
(A) Endzone - A World Apart (users Assemble_Kai and Assemble_Skoddy), Jupiter Hell (user epyoncf), and Low Magic Age (user lliihhaaoo) start a new thread for each update/patch changelog.
(B) BROK The InvestiGator - prologue and Stellar Tactics created a changelog thread, and post each update/patch changelog in consecutive posts and in a timely fashion (the same way GOG-users do for games that their devs/pubs don't post here).
(C) Astrox Imperium and Caves of Qud post in the respective changelog threads along with GOG-users, whether the thread was created by them or GOG-users.
You might want to consider some or all of this.
