I'm looking at the Larian community update post #20 released on Friday the 30th of June, close to when they announced the earlier release date.
I can't see it saying that Mac would come out today, i can only see that it specifically said it
wouldn't come out today.
"We understand that folks may be disappointed with this but we're close enough to reaching new heights for RPGs on the system that the benefits of a short delay outweigh the downsides of rushing the PS5 release and having to downscale. The full Mac version will also be released at a later date, and we’ll update you as soon as we have a target." - From Larian, not GOG.
I knew full well it wasn't coming out and I think GOG is doing great competing with Steam, and i'll always support DRM-free. Happy to wait until Larian hands it over. I can understand frustration if you weren't aware but I also checked the GOG page for BG3 yesterday and there was no mention of MAC being released, only Windows.
I'm really not sure where you read it would come out today for MAC, would love to see your source because I might have missed something, I'll admit I often do...

By the looks of your picture, we'll get Mac by August 31st at the latest, but judging from the community update I read on the Larian forums, they didn't mention a release day for MAC when they announced the other platforms get it early.
My takeaway is that we will either get it when they said, August 31st, or earlier which is even better. Win-win. I'm hoping for earlier!
