Hello!
In the old Zork Nemesis, if you patch to 1.1 version, you can actívate subtitles.
The GOG versión have subtitles too?

The gog version has no subtitles, but you can donwload the Subtitles patch (http://www.thezorklibrary.com/installguides/zn-win.html), but it will give you the Windows version that is usually far to fast on modern systems.

But if you find a way to slowdown the system it works fine.
