Until/if ever the Linux version comes to GOG, you can use Lutris to install the Windows GOG version. There's an installer script at https://lutris.net/games/xcom-enemy-unknown now for the Lutris library and I tried it, it works fine!

You can also ask the company that made the linux version of XCOM to release it on Gog.
