The procedure described below applies to the online installation of XCOM2 via the GOG Galaxy client, for the users who own the "War of the Chosen" DLC.
-The installation should hang up at two points of progress.
A.
The first hang up should occur when the download progress reaches around 60%. At this point the client will have downloaded the XCOM2 base game files, without any DLC. In order to get rid of the hang up close and restart the GOG Galaxy client. The download should progress further.
B.
The second hang up should occur when the download progress reaches around 90%. At this point the client will have downloaded the XCOM2 base game files, plus the War of the Chosen DLC (and any minor extra DLCs). In order to get rid of the hang up close and restart the GOG Galaxy client, but you will notice that the download progress made after that will be 1-2% before it hangs up again, while closing and restarting the client will not fix it anymore.

It’s time to close the GOG Galaxy client and go to the folder where your GOG games are downloaded and installed.

Cut and paste the XCOM2 file to any other directory and restart the GOG Galaxy client.

It will try to resume the download but after a while it will return a “failed” result. Cancel the download and close the GOG Galaxy client.

Go to the directory where you have pasted the XCOM2 file and cut and paste it into its original directory.

Restart the GOG Galaxy client and choose to “scan folders for GOG games”. Choose the folder where your GOG games are installed and XCOM2 will be imported to your installed games section in the GOG Galaxy client.

Go to the “manage installation” section and un-tick every DLC that shows up as installed. The game will update and you will only have the XCOM2 base game ready to play.

Verify/Repair the files to make sure the GOG Galaxy client is fine with your installation so far.

Go to the manage installation section gain and tick one by one any DLC you own to be installed on its own instead of ticking all of them and installing them as a batch of DLCs to make sure there is no conflict in the download. Let the "War of the Chosen" DLC be the last one you download, after you have downloaded all of the other DLC you might own.

The "War of the Chosen" DLC download will hang up at around 90%. Restart the GOG Galaxy client and the download will progress and be copleted successfully.

After all the DLCs are downloaded you should have the full game ready to play. Verify/Repair the game files again, just in case.
-You could try to follow this method after the first hang up and let me know if it worked, since I only tried out if it works after the second hang up occurrs.
-Otherwise you can install the game using the offline installers.
