You should always update DLCs at the same time you update your game.
In case you use GOG Galaxy it should handle updates automatically.
If you download offline installers and update game manaully then while you download update (either patches or full game) then download also DLCs again and perform installation for them too.

There's no patch update option for DLCs but you need download full DLC installers.

If you are using french version from the game and there's no 7.10HF2 downloads for DLCs in french then download english versions from DLCs and perform installation using those.
Base game defines used language and DLCs are multilanguage so they adapt to base game language.

It's the linux vertion so GOG Galaxy is not an option and it's not an updat but an install.

Only the ENGLISH version usually is up to date. Use that and the game should still be in, or possible to change to, whatever you want to use.

Please everyone affected, send A LOT of complaints to GOG about this problem and maybe they after another twelve years will do something about it.
