So, when I start a new campaign I don't see any options for playing as the US/NATO. How can I fix this issue?

The Soviet Assault campaign is mixed with the original campaign, it works as designed. But you can revert the complete edition by renaming assault.dat in the main game folder to something else like assault.old. Reference : https://www.pcgamingwiki.com/wiki/World_in_Conflict
