I liked the version of Wolf3d that was in Wolf: the new order. It played very smooth and because the mouse worked like a modern shooter it felt nice. How does this version compare?

Well this is the original dos version of Wolf3D so there will be no mouselook or real mouse support, you can use ECWolf to get close to how it played there.
Looking up and down is utterly pointless in Wolf 3D/SOD. All enemies are at the same height, the floor and ceiling aren't textured, there's never any reason to aim or look at a different level than straight ahead.

You can get horizontal mouse look by using ECWolf.
ECWolf doesn't seem to have mouselook in the options.

Also is it possible to get a crosshair?

it has mouse movement, and sadly not it is not, you wont need one but I can see why you would want/need one
ECWolf has vertical mouse look. Enable cheats and then use Tab+M (Backspace+M if you bound something like the automap to tab).

But there's not much point since it's just visual.

you don't need one in wolf 3d you shoot where the gun sprite is pointed the engine lacks an z axis and the levels are built using the same editor keen was made with.
Check out this Wolfenstein 3D IWAD for zDoom that plays just like the original Wolfenstein 3D, except with modern controls:
