Are ther any good mapping tools that aren't Grid Cartographer? I can't justify spending $20 on something I would probably only use a few times, and I'm having trouble finding a free alternative.

Automap mods for both Wizardry 6 and Wizardry 7 exist.
They are based on a custom build of DOSBox from the author of Grid Cartographer.
The problem with those is that I don't want an automap, and that it would only work with 6 and 7 when a general purpose mapping tool would also work with the first 5 games, and any other grid based game I want to play.

You are asking for something that doesn't exist. Even Grid Cartographer is currently compatible with not more than ten games.
If you want to draw the maps yourself, you can use any drawing tool, such as MapTool.
Grid Cartographer's compatible with any grid based game, it's just that the game link might not be. And after trying the thing you linked to me, it's not the kind of program I'm looking for. I guess I'll just use Excel.
Does anyone have a write up on how to get the automap mod working in the gog version of the game?
