Some things I've figured out that I wasn't able to find answers for online (maybe I was looking in the wrong places):

Witchaven 1 and 2 from GOG installed with mouse look enabled (a huge improvement over the original releases), but somehow mine became disabled.

Press F12 to activate mouse calibration (a prompt appears in-game). Then press W and S (default keys to move forward and backward) to adjust mouse Y axis sensitivity level. Press F12 again to turn off mouse calibration and lock your current setting.

If sensitivity is set to 0, mouse look will be disabled.

If there is a way to adjust X sensitivity, I don't know it.

Mouse settings apply to the entire game; you can save, load, start a new game, and everything will have whatever settings have been made.

Gamma Correction: Press F10 repeatedly to cycle through gamma (brightness) levels. Changes made here only apply to your current save game. So if lighting looks correct when you start a new game but looks wrong on your current game, make this change THEN save your game and the gamma choices will be kept.

Finally, shield control. The Help Menu (which applies to classic controls) says that the F key is "Follow Mode", but I don't remember ever using that (or what it is). "F" is now used to raise or lower shield. This can be important if you want to preserve your shield for a while, or if you want to take advantage of two-weapon fighting (you will automatically use a second weapon on some attacks after attaining higher levels).
