I've just bought the game and it really looks and sound nice, but everytime i'm making a turn, the plane stalls and can't be recovered.

I'm flying with full throttle, happens with every plane, setting is realistic. Controller is XBOX360.

Feels like almost flying Rise of Flight...

You can stall if your airspeed is low or if you go beyond the critical angle of attack during turns. In your case it's the second one. You have to avoid pulling the stick sharply and to the maximum. This can be awkward with keyboard controls, one thing you can try is to adjust the sensitivity.
