We've released a small update for Wasteland 3.

Improvements to memory usage that can result in a more stable play experience.

(Please note that our Devs are currently investigating a number of other issues which have been reported and we expect further updates to be available very soon. Thanks all for your patience in the meantime!)

It usually takes GOG a little while to update the offline installers. I'm sure they'll be updated soon with whatever the most recent patch is.
