This probably won't work on a human player, but it definitely works when you are fighting the comp in the campaign. When the AI loses a gold mine, they will obviously try to mine from another source. You can put up guard towers or ranged units (no casters or siege) and they will snipe the peasants/peons as they approach the mine. You want to have enough towers/ranged that the workers will die before they can take a load from the gold mine. Workers are the squishiest units in the game, so this is pretty easy to do. This will shut down their economy, and by extension, their ability to attack your base. It also saves a gold mine for when the one you currently have gets depleted.
