I’m in the process of building a new computer. I played Bloodlines after it first came out, but haven’t played it in years. I plan on getting my computer up and running this weekend and want to install Bloodlines. My question is...What patches do I need to install after I install the game? Thank you in advance for any help.

The game comes bundled with the Unofficial Patch Basic (UP) but GOG's version may or may not be a version or two behind. That one is like as close to vanilla as possible. You can also download the latest version of UP and either choose the basic ( = vanilla) or plus version. Remember to turn off auto updating if you are using the Galaxy client as that will screw your game up.

Both are included, you decide during installation which one you want!
