I heard there was some underlying kinks/bugs in the game that needed a 3rd party patch to fix, but not sure what to do. I'm not sure if the GOG version is the most stable one

If you have Win10, there's only one actual patch and it is included in the GoG version. All of the major bugs have been gone for years.

On the other hand, if you want to see a bunch of restored content and general story fixes, then look into the plus version.

If you are talking about Vampire®: The Masquerade - Bloodlines™

On the third hand, the major bug that you should not play too long sessions is still present.
