Is it possible to play UT2K4 in 16:9 1920x1080?
It just boggles my mind that we can go as far as 16:10 1680x1050, but not 1080?

You can edit the ut2004-win64.ini (or ut2004.ini, depending on your system). It's located in Unreal Tournament 2004 > System.

Change these values:
FullscreenViewportX=1920
FullscreenViewportY=1080
