Call me paranoid, but I have an inventory full of stuff that I can probably drop. Anyone completed the game willing to list out some things you held onto that are safe to ditch?

I wouldn't recommend dropping anything due to the fact that you have Thieves in the game who WILL take your stuff. To see this, drop an essence or a weapon you no longer need and then climb down out of sight. Wait for a bit and a Thief will teleport in and steal the stuff lying on the floor.

Still playing but read somewhere you should not drop keys. I believe you're supposed to use the Bank to safely store extra items. That's what I do.

I didn't need it again yet.

But even if you do, not all is lost. Every item you drop is eventually collected by the thieves in the game. If you need something back, you just have to kill a few thieves (by dropping an item, going up or down a ladder, waiting for a thief to teleport in, and killing it before it teleports outs) until one of them drops a "strange scroll", which teleports you to their hideout, where everything you dropped is found.

Is it early on you can find the bank or is that a middle or end-game feature?

Very early on. It is not far from the first merchant.

EDIT: To elaborate, as you have asked me to:
- From the central saving point, walk two blocks to the right, then one block up.
- As you enter the block (from below), you will reach a lock.
- Activating the lock will raise a pair of doors to the right.
- Beyond the doors, is a cashier-type of guy that, after some conversation, will sell you a "Harnabank Key" for a one time fee of 100 coins.
- Just to the right of the cashier, is a big blue door, the bank itself, which you can enter once you bought the key.
- Inside, you can drop items at will, safe from thieves.
- Note that when you leave the bank, the pair of doors will have dropped down (a bug?), so the only way out is to use some teleporting device (e.g. the halo).

Thanks all for the advice.

I've been farming the thieves just for some fun. I got my glass back, heh. Found an area in the laboratory with a trap you can bait and let the little buggers farm themselves. Drop one item, then a thief gets zapped dropping another item. Then two thieves show up and drop two more items and so on. Quick way to clean them out and see if you lost anything.

Also found the bank.

From the portal door in the Lab go one room to the left. At the top is a hall with floor to ceiling electric rays moving left to right. just drop something in that area and go hide on another level. Thieves will just keep appearing and getting killed.

Sorry for necroing this thread but just wanted to add that even items that have been stolen from you will be eventually be brought to the Thief Vault.
So, as far as I'm concerned, it's safe to drop/ditch everything since nothing can get lost forever.
