Not that I'm trying to be a cry baby that has been spoiled by the minimaps on modern games, but I have a real problem with navigating my party around Britannia in Ultima 7.

I do not mind not having a map for a town, but when NPC, Joe Smith, says take this letter to Happy Town, and I do not know which general direction I should go that's a problem.

I did get through the initial quest in Trinsic, but that was mainly because the NPC's would give general directions of SW, NW, etc.

Any advise as the provided maps are hard to read.

Can't remember who made it, but perhaps this might help you out?

Also, if you use your in game map (I think you should get given one in Trinsic? Can't recall), and you also have a sextant, it will pinpoint your location on the map (during the day only I think).

Most of us who will have played U4-U7 will know Britannia like the back of our hands, so we can always give directions.
You barely notice the stretch in these old games, especially when using the openglhq mode available in unnoficial versions of DOSBox:
