I've seen in YouTube there's different versions of the OST for Ultima Underworld. None of them is the same as the one in the GOG version. Why is that there is so many? And how is it that the one in GOG is also different from the rest?

Technically there is only one OST. The video titles by themselves seem to clear explain why you might find different 'versions' - because it depended on what sort of sound card you had. This was not unique for older games.
The GoG version has the Roland music set as default. Which sucks, since Roland, in this case, is by far the worst version. Try setting it to Soundblaster and you will see what I mean.
Roland actually is the best, it just doesn't work out of the box. You need to emulate it separately, there are threads in here on how to do it. It still boggles the mind, that GOG made that the default soultion, though, instead of Soundblaster, that works out of the box.
