Hi I recently started playing the first Ultima Underworld game and I am really impressed with it. This game seems to be the Dungeon Crawler I always wanted but never knew about. I have been getting used to the controls and have found that I keep accidentally pressing the ALT key while I move backwards. This would not be an issue if it didn't instantly crash the game. Is there a way to stop this from crashing my game or do I just have to get good.

You can use a keymapper to change the [Alt] key to different key while you play.

There is also a mouselook patch (https://github.com/JohnGlassmyer/UltimaHacks?tab=readme-ov-file#ultima-underworld-the-stygian-abyss) that you can apply that changes the user interface to a more user friendly one. It's a bit complicated to install, for GOG, requiring you to unpack the GOG file, patch the executable, then repack the GOG file into an ISO image, but once it's installed the QOL improvements are worth it.
