While it seems to play nice with the standalone boxer, I'm asking if the OSX version is delayed because gog is planning to use exult with some enanchment or is simply a matter of time to see the games ported with boxer, because in the first case I'll wait patiently to play them, in the latter case I'll simply start :D
A deal with exult is unlikely since the developers of that engine have no rights to the Ultima series.
tbirdo, nice answer and it is true that the Exult developers have no rights to the Ultima series but GOG does and could use the Exult engine. Same as they use Dosbox/Boxer to play the games. GOG wouldn't even have to make a deal since Exult is open source (GPL).

@Lucac81 you can use the OS X version of Exult to run the U7 games that GOG sells. The documentation has a little guide on how to get the game files off the GOG installer. Unfortunately you need access to a Windows machine or have to install Wine or Crossover to do that.
I too suggest you use EXULT.
Even if there was an OSX version via some kind of DOSBOX, EXULT is still the better choice anyway.

About getting the files via GOG I have no Idea,
but using Wine to extract the files and then install seems like the best Idea to me.
I always use Wineskin to make a wrapper, install the GoG installer into it, get the files and throw the rest away. If GoG is using the updated installer you might have to run Winetricks gdiplus first.

I doubt GOG will use Exult especially since it makes changes to the game that were not present in the original which people will complain about, yes alot of changes are for the better but the point is there are people who want the unaltered originals flaws and all, and it also introduces some annoying bugs namely the disappearing item bug. As for why Ultima 7 hasn't been released on Mac yet while the others save for Ultima's 7, 8 and 9 have already been released on the Mac here is probably because Ultima 7 is a touchy game as it has to run under a certain environment or else it acts up, you can see this in the release/running under dosbox which has some really annoying speed issues(runs too fast in some areas and slows to a crawl in others) or wont run so it's possible that Boxer at this stage can't come close enough to what the Ultima 7 engine wants.
