I finished U7 and went on youtube to listen to the OST and what I am hearing is completely different from what I heard in-game, like they are some remakes/remasters. I found up to 2 additional versions for some tracks. (Roland-32/MIDI). I can't even find the versions that I heard in-game.

They seem to have a higher quality and complexity too. What's up with that?

How can I know? There aren't any audio samples to listen. I typed 'Ultima 7 OST' on youtube and none of the vids had original audio.

Regardless, do you have any idea where I might find the original audio tracks? They don't seem to be included in the goodies and are nowhere to be found on youtube.

The music type is midi. If you google it, you'll get results.

I found a list of midi tracks but they still don't sound quite like what I heard ingame, especially the gypsy/furtune teller track.

Almost all of GOG's dos-games are configured to the rather basic soundblaster sound and music. It's a shame really as many of their games truly shine with Roland MT32 (or Midi, GUS etc.)-emulation. Dosbox itself supports MT32 and it's pretty easy to configure it that way but I guess it's a licensing thing. You can find the two MT32-roms very easy in the net but it's not exactly legal to do so. The easiest way to enjoy Ultima VII with the best possible musical score is by using Exult. With Exult you can even use the remastered music done by the very talented JD Harding (it's the way I prefer U VII at the moment).

if you download the ogg encoded music tracks from the Exult homepage and extract it, you can listen to the MT32 tracks, encoded as ogg files... http://exult.sourceforge.net/download.php
