It says in the write-up about Ultima 7 that " features a complete graphical overall "

What do the graphics look like ? The same as the screenshots attached to the game on GOG ? I don't believe graphics make a major difference but they are factor for me

I think the phrase you're referencing is referring to a complete graphics overhaul between Ultima VI and VII. Regardless, the screenshots on the game page are exactly what the game looks like.

You can also apply the usual DOSBox filtering effects to the game that the DOS version lacked (launch graphic mode setup from the Start Menu and experiment with the Scaling Engine setting on the Advanced Settings page).

GOG tends to do most of the DOSBox configuration for you ahead of time, but I would suggest trying Exalt; I think it does fix some graphical issues.
Oh right, I forgot about Exult for a bit there. :) Yes, Exult is a good option.

As well as filters like those offered by DOSBox it also allows you to run the game at higher resolutions (showing more of the world at once), includes optional visual improvements (paper doll character models for The Black Gate, which are otherwise only available in the second game, The Serpent Isle) adds some handy keyboard shortcuts and has various bug fixes. Exult also lets you use the improved Roland MT-32 sounds and music.

Purists will want to stick with DOSBox but Exult is the thing to go with for the most approachable experience.

Exult allows you to increase the 'view distance', but setting it too high can cause problems because you can see areas that would normally be off-screen (unless they've patched that since I last used it).
