I really like Ultima VII, but this is the second major bug that I encounter. I used her healing services once or twice and everything was fine, but now suddenly she ALWAYS says she needs to rest before healing again even though I haven't used her for healing in a while. If this doesn't mean that later down the road I'm gonna encounter a game-breaking bug, I guess I can live with it, but I'm really annoyed that I've encountered two big bugs in such a short amount of time. (The other one being the Minoc bug).

If anyone has any insight on this it would be very much appreciated. I really want to play this game all the way through.

Unfortunately this is a bug, that usually hits after a while and makes Jaana less useful. There's no known solution, but a simple workaround. Simply dismiss her from your party, heal for a little fee (well, it's rather little once you're far enough in the game) and let her join again. It's just not possible to heal herself that way.

I encountered this bug and tried the work around and Jaana still tells me she needs to wait awhile, so it seems there is more than one variant to the bug.

In my case, I used her service twice. First time to heal, and after she gave me the "wait awhile message" I rested and then was able to access her healer dialog options again. The second time was to resurrect, and ever since then she's given me the "wait awhile".

At this point I'm assuming there is nothing I can do about it other than fire Jaana and recruit somebody more useful.
