I am playing Ultima VII and have turned off full screen mode so it runs in a box. I would like to use a text editor to take notes but the game locks the cursor into its own box making it impossible to use another program. Is there a way to get to other programs while Ultima is running?

Here's one method that works for me:
1. Press Alt+Enter to enter full screen.
2. Press Alt+Enter to leave full screen.

Also, according to the DOSBox wiki, Ctrl+F10 should disable mouse capture, allowing you to click on another window with the mouse.

Simply alt+tabbing to your text editor should break the mouse capture as well. It'll reestablish the next time you click within the game window.
If your use exult, there is actually a ingame notebook to write all your neccesarry notes.

I actually prefer haveing a journal beside me with a sharpened pencil when I play, I find it rather immersive.
