I've flipped through like 8 manuals and can't figure it out

It all depends on which Ultima you're playing.
U1 thru U5 - hit the [Q] key for Quit (saves, but doesn't exit the game.
U6, Savage Empire, Martian Dreams, U9 - [Ctrl][S] to save, [Ctrl][Q] to quit (doesn't save).
U7, U7 pt 2 - [S] opens the save window.
U8 - [Esc] to open the Diary where you can save.
UW1, UW2 - Use the Options icon and select Save Game.
