On the download page for 1 and 2 is Ultima 3.

I don't see one for 7 or 9, although I guess 9 is Are you sure sure you want to try this game of the damned and why were you nuts enough to buy it in the first place... :p

Ultima 7 has cluebooks.

Looking at my game-page (here on the website; I don't use Galaxy), I do indeed see a cluebook listed for Ultima VII. It's found amongst the "extras" on the right-hand side.

As to Ultima IX, it has its issues, but I don't find it to be anywhere near that bad! Indeed, the open world in particular is one of the best that I've yet encountered, I would say. There's some solid fun to be had in it, despite the bugs and story issues.

How hard are they without cluebooks?

My bucket list is to finish them, (It's bigger than that...they're just part of it.)

I haven't much played Ultimas I or II, so I'm not in a position to speak to their difficulties, but if you do find yourself stuck then I see that The Codex of Ultima Wisdom (an Ultima wiki) has walkthroughs for both. See the links below:

1 and 2 lack them because 3 was first to have a book made for it. The only print guides I have seen for 1 or 2 (limited as they were) were as sections in larger guide books devoted to multiple Ultima games.
